Chai Tea
Bring 2 quarts of water to boil in a large pot on the stove.
Dump 15 whole cloves into the water and boil for 1 minute.
Add 20 whole cardamom pod, split open with a spoon, 20 black peppercorns, 3 sticks of cinnamon and 8 1/4”-thick slices of fresh ginger to the water.
Put the lid on the pot, lower the heat and simmer for at least 30 minutes and up to 3 hours.
Remove the pot from the heat, stir in 1/2 tsp. black or green tea leaves, and let the mixture cool.
Strain and serve warm or chilled with honey and milk to taste.
